Aussie Pub Grub And More In Canvas

CEBU, Philippines - Sometime last month, I managed a leisurely lunch with Eya Rapes-Shrimski who is the hands-on manager of the newest resto at The Terraces in Ayala Commercial Complex. It was also time to reminisce, as Eya and I had not connected since our Cebu Plaza Hotel days in the early 1990s. Eya successfully established herself as a hotelier over the years, settling down in Sydney, Australia, after moving through several countries in connection with her work assignments.

Married to an Australian – Chef Steve Shrimski – Eya imbibed the frenetic culinary landscape of Sydney while teaching in a culinary school. After some years, when their son is at an age when he should also get to know the culture of his mom, the Shrimskis decided to open a typical Australian Bistro/Bar/Gallery in Cebu. As an added feature, the owners have made their venue an art exhibit area, as well.

“As a Bistro, each plate that leaves the kitchen is a chef’s artwork. Featuring modern Australian cuisine,” explained Eya. Food is always innovative, using available fresh local produce and imported ingredients, swirling smoothly those Western cooking procedures with Asian tastes to come up with a distinct culinary concoction.

“The Bar will feature a range of Australian wines and a popular selection of beers and spirits,” Eya pointed out. Regular wine tasting will be scheduled, to inculcate among local wine lovers the fine offerings of Australian wineries. As an option for the health-conscious, traditional non-alcoholic beverages and tonics are on the menu.

Like the typical Aussie pub scene, Canvas Bistro/Bar/Gallery has an ambiance that is casual chic, with prompt service and reasonable prices. A section is reserved for small group meetings or intimate parties.

For the Holiday Season, Canvas has 3-level pricing : Level 1 – P295.00 + 8% SC, Monday thru Fri lunch Special Menu; Level 2 – P395 + 8% SC, Soup or Salad, 1 of 3 Main Courses, 1 of 2 Dessert, Iced Tea; Level 3 – P495 + 8% SC, Tapas Plate (1 for every 4 guests), choice of 3 Main Courses, choice of 2 Desserts.

For a booking of 15, 1 voucher for a weekday Special Menu.

Christmas Day and New Year’s Day Lunch & Dinner – only Set Menu, no ala carte orders. Carving Station: Roast Turkey or Honey Mustard Ham, P595.00 + 8%SC. Children below 10 years old, half price.

They also have for gift/take home orders: Premium and Standard Hams; dressings and sauces as gourmet gift items.

Check this new bistro/bar/gallery in The Terraces, right next to the escalator near the entrance to the multi-level parking, on top of Coffe Bean & Tea Leaf.
