The Reason for Modern Japanese Cuisine

CEBU, Philippines - Over the last decade, the popularity of Japanese food in Cebu has increased greatly, contributing to the continuing diversification of the Cebuano eating habits; but Japanese cuisine itself has evolved significantly since pre-modern times.

Among the key factors in the “modernization” of Japanese cuisine were the dietary effects of imperialism, reforms in military catering and home cooking, wartime food management and the rise of urban gastronomy. Japan’s patchwork of diverse regional cuisines became homogenized over time and was replaced by a set of foods and practices with which the majority of Japanese today ardently identify.

Opening at The Parkmall, beside KFC, is Japengo, a Japanese restaurant offering modern Japanese cuisine. Its operations shall be known for its ample portions and striking designs. With this launching branch, Japengo serves inventive Japanese cuisine ranging from sushi (hand-rolled rice), nimono (simmered dishes), and creative kobachi (salads) to signature dishes like Menmono (noodles), yakimono (grilled dishes), carpaccios, filet mignon, and specialty rolls.

As a culinary experience, Japengo is all about flavor and fusion, texture and contrast, freshness and balance. Food is simple, brilliant and nourishing.
