Chinese Food Festival in Shangri-La Mactan features hand-pulled noodles from Beijing
Shangri-La’s Mactan Resort and Spa offers an interactive culinary experience between July 20 to 29 at Tea of Spring restaurant. “Oodles of Noodles” is a Chinese Food Festival that focuses on authentic hand-pulled noodles made specially by guest noodle chef Wan Jun Hong of Beijing Kerry Centre Hotel, China.

Traditionally, there are over 10 techniques to make noodles, including hand-pulled, hand-cut, knife-sliced. Hand-pulled noodles are prepared by mixing at least two cups of flour with one cup of water. The dough is covered with plastic wrap and allowed to rest at room temperature for at least an hour. The noodle chef then covers the dough with dry flour, after which he stretches the dough and swings it gently until it twists around itself like a rope. The chef repeats this stretching and twisting until the dough texture becomes fibrous, and becomes ready to be pulled into noodles.
After the stretching performance, the chef places the dough on the countertop, grabs the two ends with one hand, holds the middle section with the other hand, and pulls the dough. This process is repeated until the noodles double in size, and become ready for cooking.
