Independencia: Flavors of Mindanao

Last June 7, media guests and social media influencers gathered at Café Marco for the launching of its Culinary Journey featuring the rich and distint cuisine of Mindanao. The launch started with Marco Polo Plaza general manager Brian Connelly’s welcome address and introduction of the guest chefs for the food promotion.

This year’s Independencia launched presented Marco Polo Davao’s culinary treasures, Executive Chef Alex Destriza and Chef King James Tinio, as they worked together with the most talented chefs of Marco Polo Plaza Cebu in perfecting the Mindanao cuisine. Setting the tribal atmosphere throughout the event was modern ethnic music by Huni School of  Music.

Home to more than 20 ethnic groups, Mindanao cuisine holds an interesting mix of flavors and textures. Chef Alex mentioned that most dishes in Mindanao included bunt coconut flesh added to the spices for that unique flavor. Dishes featured include Piyaren Udang, Piyanggang Manok, Piassak, Palapa, Linotlot nga Manok , Tinadtad nga Babak, Wadket Makadurian, Davao’s Malagos Cheese and many more.

Filipinos’ unified love for gastronomic adventure continues at Café Marco.
