Filipino Hotcake

CEBU, Philippines – Pancake, also known as hotcake among Filipinos, is a fried cake. It tastes best when served while still hot, fresh from frying pan. This could be the reason for the name hotcake. Although readymade pancake mix has since been made available in grocery stores, hotcake is actually very easy to make.

The effort and love poured into the preparation is always much appreciated in the final output, although it's not really difficult to do. Hotcake is good for breakfast or as morning or afternoon snacks.

 

Ingredients:

1 cup all-purpose flour

2 teaspoon baking powder

1 tablespoon sugar

½ teaspoon salt

1 cup evaporated milk

1 egg

3 tablespoon oil or melted butter

 

Cooking Procedure:

1.  Sift flour, sugar and baking powder into a large bowl, and mix thoroughly.

2.  Add milk, egg, oil (or melted butter) and salt. Beat slowly until the all ingredients are well blended.

3.  Grease the frying pan with at least 1 tablespoon of oil. Heat up in a low fire.

4.  Pour ¼ cup of mixture into the frying pan.

5.  Let stand for approximately 1 minute then flip on the other side for another 1 minute or until the hotcake turns Light brown

6.  Serve hot with honey.

 

Cooking Tip:

For better results in frying hotcakes, use a frying pan with Teflon coating.
