MANILA, Philippines - Gallery Vask has been chosen as one of only six restaurants in the Australasian and Southeast Asian regions considered the next generation of dining destinations, as listed in “Diners Club 50 Best Discovery Series 2015.”
The choice of Vask was recently announced on www.worlds50best.com.
Gallery Vask joins Aziamendi in Phuket, Thailand; Wild Rocket in Singapore; Ester in Sydney, Australia; Orana in Adelaide, Australia; and Franklin in Hobart, Australia. This is a true milestone for the innovative restaurant, which takes pride in using local ingredients with its anthropological cuisine. It is also the first restaurant in the Philippines to be part of this esteemed roster.
By creating a new language with food based on his travels and experience, chef Chele Gonzalez has contributed to enriching the culinary scene in the Philippines, thus capturing the attention of the world. And, even as he feels humbled to be recognized for his work in Gallery Vask, he also feels compelled to continue to share this cuisine with the many Filipinos who are true fans of fine food.
“My dream is that Filipinos rediscover the beauty and the many unique facets of Philippine flavors through the ingredients that are used in the dishes we serve in our restaurant,” Gonzalez says. “We have taken many journeys and continue to study the best use for these, applying what I have learned throughout my years of learning gastronomy. That is why I put so much pressure on myself to redesign our degustation menu seasonally.”
