MANILA, Philippines -Pastry chefs Miko Aspiras and Janine Misa of Raffles and Fairmont Makati triumphed at the recent Hong Kong Food Exposition (HOFEX), the largest food and hospitality tradeshow in Asia Pacific region, held last May 7 to 10.
It was during the Hong Kong International Culinary Classic competition that Aspiras earned the highest score in the “Best of the Best: Live High Tea†challenge, garnering him the Gold Medal award. His creative interpretation of High Tea showcased the flavors of Manila, Shanghai, Barcelona, Tokyo and Hong Kong in petite edible works of art.
Not to be outshined is Misa’s pink guava creations during the “Fantasy Table Desserts†category. Her unique pink guava cheesecake and pink guava white chocolate mousse gained her the Bronze Medal — once again giving pride not only to Raffles and Fairmont Makati, but also to the Pastry Alliance of the Philippines, led by mentor chef Buddy Trinidad, who nurtured the talents of the two pastry superstars.
Also guiding Aspiras and Misa to excellence is the hotel’s executive pastry chef, Didier Derouet with the support of executive chef Christian Knerr and executive sous chef Robert Bolaños.
