MANILA, Philippines - It sounds superfluous but chef Jyn Monteverde describes her Mediterranean Chicken as ‘not only chicken at its finest but chicken at its best,’ a welcome alternative to your usual chicken barbecue or chicken inasal.
Chef Jyn said that her chicken is slowly roasted so the meat comes out moist and juicy, marinated in ground spices common in the Mediterranean, and olive oil.
The Mediterranean Chicken is served with a salsa of vegetables and tortilla, and it goes well with a special kind of rice (lower photo) prepared as its ‘pares’ (partner).
