CCA offers special class by sushi master chef

MANILA, Philippines - The Center for Culinary Arts (CCA), the country’s leading school for culinary professions, presents master sushi chef Andy Matsuda, who will conduct a special seasonal program for CCA called “The Art of Making Sushi” from March 4 to 8. The program is an intensive hands-on course that will equip participants with the fundamentals of being a professional sushi chef.

Chef Matsuda was born near Kobe, Japan, in 1956. His culinary ventures started at a young age, as he helped in the Japanese restaurant of his family.. When he was 25, he worked for a restaurant called Little Tokyo as an assistant chef, but was promoted to chief sushi chef after only a few weeks.

After recovering from a serious bout with colon cancer, he decided to establish his own school called The Sushi Chef Institute in Los Angeles, California, where he continues to teach Japanese cuisine to this day.

 â€œAs a chef, I would like to impart my knowledge of sushi to various people, in an accurate and comprehensive manner, in order for them to discover new aspects of sushi and gain more interest in this field,” says Matsuda, who has recently been touring across the Asia-Pacific region. “I hope to instill the core of my teaching philosophy, which is based on my profound appreciation for nature, family and society, to people from all walks of life.”

This is his second visit to the country. For CCA, he conducted a special demonstration and hands-on class for its students last August.

The five-day exclusive program will be held at the CCA Manila campus along Katipunan Avenue, Quezon City, from March 4 to 8. Two sessions (morning and afternoon), will consist of the following modules: Day 1 – Introduction and Basic Rolls, Day 2 – Tempura and Special Rolls, Day 3 – Fish Prep I (Sashimi and Nagiri), Day 4 – Fish Prep II (Aburi and Gunkan) and Day 5 – Chirashi and Other Sushi. The course fee includes ingredients, recipe handouts, uniform (apron and toque), and a certificate of completion from The Sushi Chef Institute.
